Taking copper and palmitic acid together may decrease the activity of an important antioxidant enzyme called SOD1. This can lead to increased oxidative stress and potentially contribute to neurodegeneration and memory decline. High fat consumption, including palmitic acid, can suppress SOD1 activity by reducing copper availability. Palmitic acid decreases the levels of a copper chaperone protein called CCS, which is necessary for SOD1 to function properly. With less CCS, SOD1 is more likely to be imported into the nucleus, where it can't perform its antioxidant role. This reduces SOD1's ability to protect against reactive oxygen species.
